The art of beautiful cake making

Anna Lewis’s love of baking used to extend to making cakes for friends and family but she recently she took the leap into professional baking, creating beautiful bespoke cakes for weddings and special occasions and realised her dream by launching Anna Lewis Luxury Cakes.

As well as bespoke wedding cakes, Anna Lewis Luxury Cakes make cupcakes, macarons and wedding dessert tables. Their style is modern and uses a range of different techniques and use only the best ingredients sourced from local suppliers where feasible including high quality butter, free range local eggs, finest Belgian Chocolate, Madagascan Vanilla and seasonal fruit where possible. The result is the designer cakes not only look amazing but taste as good as they look.

From her studio in Knaphill, Anna works closely with her clients offering a unique cake design service.

Anna’s company regularly produce special promotions on key dates such as Valentines, Mother’s Day and Easter. These are luxury sweet treat boxes of iced biscuits, macarons, meringue kisses, cake pops, cupcakes and home-made marshmallows in a range of delicious flavours, so there are many occasions you can indulge in these tasty treats. This Christmas Anna will also be offering personalised gingerbread houses and small fruitcakes.

Anna offers a personal and exclusive service for wedding clients which means she takes on only a limited number of weddings each month, so it is recommended that you make the initial contact 9-12 months prior to your wedding date.

After initial contact, Anna will provide a guide price from information you can give. Cake designs, styles and flavours are discussed and a consultation day is arranged.

Consultation Day is one of Anna’s favourite parts of the process as she has the opportunity to meet couples to discuss their wedding plans and cake designs. ‘People today have such interesting and diverse ideas about what they want, so it’s always interesting to share ideas’ says Anna.

On the consultation day, you can visit the studio in Knaphill to see where the cakes are created and view some display cakes before having an informal chat about design, colours, flavours and delivery. You will have the chance to  sample a selection of cake flavours from Anna’s menu that you can try there or take away.

You may not know it, but:
Many people get confused between a macaron and a macaroon, so Anna has sent this image by way of explanation!

The Knaphillian caught up with Anna to find out more about her business and her family life:

The Knaphillian (TK): What did you want to be when you were at school?
A bank manager at primary school as I thought you got to keep all of the money! That evolved into a journalist at secondary school so I went onto Uni to study English, but it wasn’t a path I ended up wanting to pursue.

TK: What other jobs did you have before you started this business?
Quite a few whilst at school and uni ranging from waitressing to customer services at the British Gas call centre. For the past 19 years though I’ve held a number of senior positions in marketing at IT and Telecoms companies.

TK: When did your business start in Knaphill?
Despite baking for the past decade for family and friends, we only started the company in January 2019 and it’s been a whirlwind few months as our cakes have been really popular with lots of confirmed bookings for 2019 and 2020 and even enquiries into 2021. It’s never too early to book your wedding cake as I’m already fully booked for some months next year.

TK: Are any other members of your family involved in the business?
No, just me, although my five and nine year olds would love to be involved but trust me that’s not something you would want unless you fancy a pink unicorn cake or Fortnite Llama on your wedding day!

TK: How did you come to be in business in Knaphill and what makes you want to stay?
Knaphill has been my home for the past 19 years, I’m passionate about our village and the people who constantly strive to make improvements and a better place for everyone. I can’t imagine living anywhere else now – this is my home and my business.

TK: What’s the most unusual cake you have been asked to provide?
I’ve was asked recently to bake a 5-tier fast food wedding cake including McDonalds, KFC and even Taco Bell! Since I don’t do novelty cakes it wasn’t one for me but a fun idea for some fun-loving fast food addicts.

TK: What is the best decision you ever made and why?
Starting my business. I’ve spent nearly ten years wanting to do this professionally but lacked the courage to just go for it and move away from my marketing consultancy business. On my fortieth birthday last year I just decided it was time to take a leap and just go for it as you’ll only regret the things you don’t do. I’m so glad I did.

TK: Are there any other business people or businesses that inspire you?
So many people! From cake designers I’ve trained with to business mentors such as Carrie Green I’ve learned so much about running my business. You can never stop learning and developing your skills.

TK: What has been your best moment so far in your business?
My first wedding cake delivery. I was so nervous delivering the cake to the venue, drove so slowly and was genuinely worried the couple wouldn’t like the cake. It’s so much pressure to be a part of someone’s special day that you want everything to be perfect. When the bride sends you that email to say she absolutely loved it all of the stress and pressure just melts away. It’s very special to receive comments afterwards and to just be a little part of that couples’ dream day.

TK: What are your hopes for the future?
My hopes are to continue to fill my diary with lots of wedding cakes. I’d also like to win an award or two for my cakes further down the line and in the long term I’d eventually like to run classes for budding cake designers teaching them key skills.

TK: What do you do on your days off?
I don’t get many days off now being self-employed but when I’m not driving my three kids around, I love to go to the theatre, try new restaurants (not with the kids!) and I try not to bake. I also love to paint but haven’t had much time recently so would like to dedicate some time to that in the future.

TK: What makes you laugh or feel happy?
My kids. They are the perfect mix of crazy and fun!

TK: What makes your weekend complete?
A lie-in followed by Eggs Benedict, a family walk around the Wetlands with our Cockapoo Poppy, delicious roast and family movie.
